Is is possible to group together or archive posts in categories rather than in months or days? I want to make categories for my posts and then be able to visit that category of posts. Is there any possible way of doing it? Maybe I could could group together the tags in my posts? I'm using blogger.

Do you mean is there a way to show only posts relating to a certain subject automatically? Or by clicking the category? For the second option you can put labels on all your posts by typing them into the Label box when you make a new post (it saves already-used labels).
Then, to display your various categories (labels), go into Settings - Layout - Click "Add a Gadget" - Choose "Labels".
I have a feeling this isn't quite what you were asking; but if you try to further explain, I'll try and change my answer to suit.

I want to add the gadget addon called "Pages" which gives you a menu of stand-alone pages that a visitor can view.

You create a page similar to how you write a blog post. From Blogger click the Posting | Edit Pages tab, then click New Page. (Note: you can create up to 10 pages.)
Once your page is published, you can link to it from the new Pages widget. The Pages widget lets you add links to your pages as tabs at the top of your blog, or as links in your blog's sidebar.
In the Pages widget, you can decide which pages will be linked and in what order they will appear. You can also choose whether you want new pages to appear automatically in the Pages widget by checking or unchecking the box to the left of Add new Pages by default.
